Here is a hearty, warming meal that has many health benefits. For instance, the nice helping of marjoram acts as a decongestant and promotes healthy digestion. Plus, it’s yummy!
Ingredients
5 cups cooked navy beans (cook in pressure cooker, or soak overnight and simmer the next day until done, approximately 2 hours)
6 medium carrots, chopped
6 stalks celery, chopped
3 medium onions, chopped
5 potatoes, cubed
6 tablespoons nutritional yeast
1/4 cup fresh basil, chopped
2 Tablespoons marjoram
4 tablespoons fennel seed
2 teaspoons salt, or to taste
1 quart distilled water
Instructions
1. Place half your water in a large saucepan and add celery, carrots, onions, basil, marjoram, and fennel seeds. Saute until onions are translucent.
2. Add potatoes and remaining water and simmer for 15 minutes, until all veggies are tender. Add beans and stir. Add sea salt to taste and serve.
