These decadent, fudgy, no-bake treats are adapted from a recipe created by Whole Foods market. They add 2 Tablespoons of sugar to theirs, but these are plenty sweet on their own.
Ingredients
1 cup water
1/2 cup roughly chopped pitted dates (about 3 ounces)
1/2 cup raw cashews
1/4 cup unsweetened soy milk or almond milk
1 teaspoon vanilla extract
1 cup unsweetened cocoa powder, divided
1 teaspoon ground cinnamon
1/4 teaspoon fine sea salt
Instructions
Bring water to boil in a small saucepan, then remove from heat and add dates. Cover, and let steep for five minutes, then drain well. Put dates, cashews, soy milk, and vanilla in food processor and blend until smooth.
In a large bowl, combine date mixture, 1/2 cup cocoa, cinnamon, and salt. Put remaining cocoa on a dish. Make each button by scooping ~1 teaspoon of date mixture into a ball. Roll in cocoa, then press flat with your thumb. Set finished buttons on parchment paper, and let allow to firm up for 3 to 4 hours.
