Hot spiced cider is a favorite holiday treat, and while there are plenty of easy, healthful cider recipes out there, this one is especially good hot or cold (though if you decide to try it hot, omit the ice cubes and add 1/3 cup water instead). You can use regular apple juice as an ingredient, but I recommend using whole apples, adding a bit of water to achieve the desired consistency, and whipping it all up in a Vitamix. This recipe is from the Vitamix website, and they have hundreds of fabulous recipes. The reason I love the Vitamix so much is that it allows me to completely puree skins, stems, and other healthy bits of fruits and vegetables
If you don’t have a Vitamix*, this can be prepared in a regular blender or food processor.
Serves 1
Ingredients
1 cup organic apple cider or apple juice (or 2 whole apples, with water added to desired consistency)
2 small carrots
1/4 teaspoon fresh ginger root, peeled
1/2 cup ice cubes
Directions
1. Place all ingredients into the Vitamix in the order listed and secure lid.
2. Select Variable 1
3. Turn machine on and slowly increase speed to Variable 10, then to High
4. Blend for 1 minute or until desired consistency is reached.
