I created this recipe at the retreat, using some of the amazing dill we’ve recently grown in our Tower Gardens, and it was a big hit. Use on salads, as a dip for your favorite raw veggies, or over warm roasted vegetables.
Ingredients
- 1 cucumber ** (don’t peel – see notes below)
- 1 ripe heirloom tomato or 5 ripe cherry tomatoes
- 1/2 cup fresh dill
- 1/2 cup lemon juice
- 1 teaspoon maple syrup
- pinch of sea salt
- a dash of freshly ground pepper
Cut unpeeled cucumber in 2 or 3 pieces and combine in Vitamix with all other ingredients to make a delicious dressing for your salad without the need for oil.
** I learned from my mom that if you cut off very ends of a cucumber, cut a gash at both ends and rub the cut off ends against the gashed ends, this keeps the cucumber from tasting bitter. You can watch an 18-second video of me doing this on YouTube.
